The restaurant recently introduced its new vegan specials to its ristorante and gourmet deli.
"Our vegan specials have been very well-received by our guests," said Vincenzo Granata, General Manager of Panevino. "Even with a prix fixe menu for this event it was still important for us to keep in mind our guests’ tastes and dietary preferences. Our vegan options are flavorful, naturally healthy and look and taste delicious."

The three-course, prix fixe menu is available August 29 through September 11 and costs $50.10 per person. For more information or to make reservations call 702.222.2400.

The Restaurant Week menu includes the following selections with vegan options:

First Course
Choice of Vegan Artichoke and Fennel soup, or grilled marinated Eggplant, or Pear and Gorgonzola salad, or Beef Carpaccio.

Second Course
Choice of Vegan Spinach Tortelloni, or four Cheese Ravioli, or grilled Salmon, or grilled Chicken.

Third Course
Choice of Vegan Dark Chocolate covered Strawberries, or Puff Pastry with Lemon Cream and Strawberries, or duo of Chocolate Mousse and Crème Brulée.

All moms and family are invited to enjoy the world-class cuisine and culinary talents of Chef Mario Andreoni. Chef Andreoni will prepare special menu selections for the dinner and guests can also enjoy classic Panevino favorites including Pesto E Gameri, risotto with fresh basil pesto and shrimp, Cioppino, traditional fish stew with Maine lobster, shrimp, scallops, clams, mussels, Chilean sea bass and salmon in a lightly spicy tomato broth with grilled garlic croutons, or Ossobuo alla Milanese, slowly braised veal shank in a red wine sauce on a bed of saffron risotto.

"There is a misconception that dining - like vegan, vegetarian, gluten-free - is boring or bland and it's simply not true," said Vincenzo Granata, General Manager at Panevino Ristorante. "We've made a commitment to create special selections that are healthy, but first and foremost, taste delicious. Additionally, as a business, and especially in this economic environment, I think it is crucial to appeal to a demographic of guests who may have never visited Panevino otherwise."

Panevino's Executive Chef Mario Andreoni created the new vegan and vegetarian specials. The two entrée items - Tortelloni Tricolori and Duo di Burger di Vegetali e Brodo Vegetale - both highlight vegetables and contain no animal products.

The Tortelloni Tricolori features homemade three-color tortelloni filled with roasted vegetables including eggplant, yellow squash, zucchini, red bell pepper, asparagus, garlic and onion on a bed of fresh tomato sauce. The homemade pasta contains no eggs and is made simply with flour, Durum Semolina, water and a pinch of salt. Panevino's heartier vegan burger entrée option, its Duo di Burger di Vegetali e Brodo Vegetale, features duo of homemade vegetable burger made with eggplant, mashed potatoes, porcini and Portobello mushrooms, roasted yellow and red bell peppers and bread crumbs drizzled with White Truffle Oil on soft Focaccia bread with grilled asparagus and roasted tomatoes and warm vegetable broth.

Additionally, Panevino's gourmet deli now offers five vegan and vegetarian salad lunch selections and a variety of organic teas, juices and coconut water.

The new deli salads include:

• Lentil Salad: lentils, wild arugula, cherry tomatoes, red onion, extra virgin olive oil
• Three Bean Salad: green beans, garbanzo beans, cannellini beans, roasted tomatoes, red onion, extra virgin olive oil
• Orzo Pasta Salad: orzo pasta, cherry tomatoes, black olives, capers, basil, avocado, grilled asparagus, chopped parsley, extra virgin olive oil
• Borlotti Bean Salad: Italian Borlotti beans, cherry tomatoes, avocado, red onion, garlic, basil, extra virgin olive oil
• Pasta Salad: Tri-color spiral shaped pasta, roasted tomatoes, fresh mozzarella cheese, arugula and extra virgin olive oil

Panevino also offers several gluten-free selections for guests with special dietary needs. Any pasta selection can be customized to include gluten-free penne, spaghetti or risotto.

A local's favorite retreat, Panevino is best known for combining a distinctive, modern setting with traditional Italian hospitality.
